Light and Healthy: Mexican Meatloaf

Today's Recipe was inspired by all my awesome readers! The question I heard most yesterday while doing our "Advertising Kickoff" was, "I never have time to cook, can you tell me recipes that are fast and healthy for my family?"

And to that I say.....YES! Cooking healthy doesn't have to take hours slaving in your kitchen! Dinner can be on the table in less than 30 minutes and be healthy too!

Today's recipe is Mexican Meatloaf, and it only has 118 calories and 7 grams of fat! That's only 3 WW points!! And the kicker....it only takes 25 minutes from prep to plate! Now that's what I call fast food!

Mexican Meatloaf
Grocery List:
1 lb ground turkey (get the lean variety)
1 lb ground pork
1 can (4.5 oz) chopped green chiles
2 slices whole-wheat bread, torn in small pieces (whole grain would be even better!)
11⁄2 Tbsp minced garlic
11⁄2 Tbsp dried oregano
11⁄2 Tbsp chili powder
11⁄2 Tbsp ground cumin
(If you don't have all of these spices at home, try seasoning with a Taco Flavor seasoning package! Just use half though!)
1 tsp salt
1 tsp olive oil (or Olive Oil Cooking spray is what I use, and that cuts even more calories!!)
Serve with: warmed salsa on top! YUMMMM!!

How to make it:
1. Mix turkey, pork, chiles, bread, garlic, oregano, chili powder, cumin and salt (or taco seasoning packet) in a medium bowl until well blended.
Shape half the mixture into four 3⁄4-in.-thick oval patties.
**Save the other half for dinner tomorrow, or freeze for some other time!**

2. Heat oil in a large non stick skillet over medium heat.
Add patties and cook 3 minutes per side, or until meat is no longer pink in center.
