3 ingredient meals: Steak Verde

Another awesome 3 ingredient meal! This time...steak! An amazing steak that has so much flavor, takes less than 30 minutes to make, and is great for the waistline! :)

Steak Verde
Grocery List:
One 1-lb flank steak (3/4 to 1 in. think)
1 cup salsa verde (green salsa, available on the ethnic food isle with the regular jarred salsa)
1 cup cilantro leaves

How to make it:
1. Brush with oil or coat with nonstick spray an outdoor grill or stovetop grill pan; heat.

2. Season steak with 1/4 tsp each salt and pepper. Grill steak 9 to 11 minutes, turning once, for medium-rare. Remove steak to cutting board; let rest 5 minutes.

3. Meanwhile, put salsa and cilantro in a food processor and process until smooth. Slice steak thinly across the grain and serve with the sauce.

**Different Takes
Rub steak with a little ground cumin before grilling. After spooning sauce on steak, scatter diced tomato and avocado on top.
Good with skinless, boneless chicken breasts or boneless pork chops instead of steak.

***Sliced tomatoes and warmed flour tortillas are delicious accompaniments.

3 ingredient meals: Ravioli Lasagna

Hey everyone! I am so sorry I have been abesent for the first half of this week! I hope everyone had a great 4th of July weekend! Let get right into this recipe, shall we? :)

Ravioli Lasagna
Grocery List:
1 jar (26 oz) triple mushroom pasta sauce
2 bags (13 oz each) frozen square cheese ravioli, thawed
1 1⁄2 cups shredded Italian cheese blend



How to make it:
1. Heat oven to 375°F. Coat a 9-in. square baking dish and a sheet of foil with nonstick spray. Put pasta sauce in a bowl; stir in 1⁄2 cup water.

2. Spread 1 cup sauce in dish. Top with 20 ravioli (or 1⁄3 of the total), flat sides up andjust touching each other. Spread with 3⁄4 cup sauce; sprinkle with 1⁄2 cup cheese.

3. Repeat layers once. Top with remaining ravioli, sauce and cheese. Cover tightly with foil, sprayed side down.

4. Bake on a sheet of foil (to catch any drips) 1 hour or until bubbly around edges. Uncover and bake 5 minutes until cheese is barely golden.

ok, now back to business... I have an awesome recipe to share, and it will take YOU to domestic bliss with less than 20 minutes and only 3 ingredients!!!! And who knew you could take something as simple and as cheap as a ham steak and make it taste so expensive????

Sweet and Sour Ham Steaks
Grocery List:
1⁄2 tsp oil
2 ham steaks (7 to 8 oz each), cut in half
1 bag (16 oz) frozen sliced peaches, thawed, cut bite-size1
jar (9 oz) hot or sweet mango chutney (found on the salsa isle)


How to make it:
1. Heat oil in a large nonstick skillet over medium-high heat. Add ham and cook 4 minutes, turning once, until lightly browned. Remove to a serving platter.

2. Add peaches and chutney to skillet and cook, stirring, just until hot. Spoon over ham. Garnish with chopped cilantro, if desired.

3 ingredient meals: Tilapia Veracruz

Yum! I love fish, and Tilapia is on the top of my list. It's firm and tasty and readily available at your local grocery store almost all year. And best of all, it's very inexpensive for fish! This recipe is super easy and will have dinner on your table in less than 20 minutes!

Tilapia Veracruz
Grocery List:
4 tilapia fillets (5 to 6 oz each)
1 cup mango and peach salsa
1 ripe avocado, diced


How to make it:
1. Brush stovetop grill pan or broiler pan with oil and heat.

2. Brush tilapia with 1 tsp oil (preferably olive oil). Sprinkle with 1/4 tsp each salt and pepper.

3. Place on hot pan. Grill or broil 5 minutes or until cooked through, turning once.

4. Mix salsa and avocado. Top each fillet with about 1/2 cup. Sprinkle with chopped cilantro if desired.

Different Takes:
• Sprinkle fish with a little ground cumin or chili powder before cooking.
• Make recipe with mahi-mahi or sea bass instead of tilapia.
• Try using a chipotle-flavored salsa; add a squeeze of fresh orange juice.

3 ingredient meals: Turkey Rollatini with peppers

Yumm, this recipe is so good, and three ingredients, it needs no other explination!!!

Turkey Rollatini with Peppers
Grocery List:
3 tsp oil
1 pkg of 3 medium peppers (red, orange and yellow), cut in thin strips
1 pkg (about 1 lb) of 4 turkey breast cutlets
1 cup finely shredded Italian blend cheese
How to make it:
1. Heat oven to 350°F. Line a rimmed baking sheet with nonstick foil.

2. Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add pepper strips and sauté 6 to 7 minutes until justslightly browned at edges.

3. Arrange turkey cutlets on lined baking sheet; mound 3 Tbsp cheese on each. Lay 1/4 the peppers across each cutlet toward one end. Roll up cutlets; secure with wooden toothpicks.

4. Heat 2 tsp oil in skillet. Add cutlets; brown on all sides. Return to baking sheet, toothpick side up.

5. Bake 25 minutes or until an instant-read thermometer inserted in centers registers 160°F. Sprinkle each rollatini with 1 Tbsp cheese. Bake 5 minutes to melt cheese. Remove picks before serving.

Different Takes
**Substitute another shredded cheese blend.
**Cook 1 lb asparagus until crisp-tender; use instead of peppers.
**Sprinkle peppers with Italian herb seasoning.

WOW!! Can you believe we have had over 10,000 hits on Gourmet Momma?! All I can say is a HUGE THANK YOU to all of our readers, those that comment, and send in your questions or recipes! I started GM as a fun little outlet for me to share recipes with my friends and family, I never thought it would grow to be what it is now! So thank you!

So in celebration, I am sharing one of my favorite things....soup! And one of YOUR favorite things, a 3 ingredient meal!!! I know that it has been 100+ degrees here in Texas this week (I'm not even joking, its hotter than Hades!) but I still love soup! Enjoy!
And thank you again for all your support!!

Spinach and Potato Soup
Grocery List:
2 cans (14 1/2 oz each) chicken broth
3 cups refrigerated garlic mashed potatoes (from a 1.5-oz pkg)
1 box (16 oz) frozen creamed spinach


How to make it:
1. Heat broth in a large pot; add potatoes and cook over medium-high heat, whisking occasionally, 5 minutes or until simmering and slightly thickened (see Note).

2. Remove frozen spinach from pouch, add to potatoes, cover pot and simmer 8 to 10 minutes, whisking occasionally, until blended and spinach is heated through. (If soup is too thick, thin with hot water.) Pour into serving bowl; garnish if desired.

**Note: For garnish, remove 1/4 cup hot mashed potatoes before adding spinach. Drop potatoes from tip of a spoon in parallel lines, then pull tip of a knife across the lines, alternating direction between each pull. It will look all fancy! :)

Mother's Day Rest: Three Ingredient Meals

Hey Everyone! I hope you all had a wonderful mother's day! My sister and her husband took me and Lagan to San Antonio for the weekend! So I am super worn out from shopping all day and lots of food and margaritas! :)

So today's recipe is super quick and easy!

Cumin Roast Pork with Dried Fruit
Grocery List:
1 pkg (6 oz) mixed dried fruit, coarsely chopped (1 cup)
2 1⁄2-lb boneless pork loin
1 1⁄2 tsp ground cumin


How to make it:
1. Heat oven to 375ºF. Soak fruit in 1 cup boiling water 15 minutes. Have ready a small roasting pan and kitchen string.

2. Make a long cut down center of pork, not all the way through. Open like a book. Mix cumin, 1⁄2 tsp salt and 1⁄4 tsp pepper; sprinkle 1⁄2 tsp over cut surface.

3. Drain fruit; save liquid. Arrange fruit over one side of pork. Fold over other side to enclose filling. Tie in several places with kitchen string. Rub meat with rest of cumin mixture. Place in pan.

4. Roast 50 minutes, or until a meat thermometer inserted in center registers 160ºF. Remove to cutting board; let rest 10 minutes.

5. Meanwhile, add fruit liquid to pan and stir over high heat to dissolve browned bits on bottom. Simmer 4 minutes to reduce slightly.
Serve with pork.

3 ingredient Meals: Spanish Shrimp

I know I haven't posted a three ingredient meal in a while, so I thought I would share this extremely simple dinner with you! All you need is three ingredients and 10 minutes, and you have a delicious and healthy meal for the whole family!

Spanish Shrimp
Grocery List:
1 pkg (3 1/2 oz) fully cooked chorizo sausage, sliced
1 1/2 lb peeled, deveined raw large shrimp
1/2 cup dry sherry or dry white wine (the alcohol will cook out, but if you don't want to use it, you can use chicken stock!)


How to make it:
1. Heat 1 tsp oil (preferably olive) in a large nonstick skillet over medium-high heat. Add chorizo and sauté 2 minutes until browned.

2. Add shrimp and sauté 1 to 2 minutes or just until shrimp turn pink.

3. Add sherry and sauté 1 minute or until shrimp are cooked through. Garnish with chopped parsley, if desired.

3 ingredient meals: Pork with Sage and Apples

TGIF!!! You know what I mean! Its been such a CRAAAAZY hectic week here! So I am so ready for the weekend! So, I am sharing one of gourmet momma's most POPULAR dinner's: THREE INGREDIENTS!! YAY!!!

Pork with Sage and Apples
Grocery List:
Four 3/4-in.-thick pork chops (1 1/2 lb)
1 1/2 Tbsp chopped fresh sage
2 red Gala apples, cored, cut in 1/2-in.-thick slices

How to make it:
1. Sprinkle both sides of pork chops with sage and 1/4 tsp each salt and pepper.

2. Heat 1 Tbsp oil in large nonstick skillet over medium-high heat. Cook chops 3 minutes on each side until browned and cooked through (160ºF on instant-read thermometer inserted from side to center). Remove to plate; cover loosely with foil.

3. Sauté apples in skillet 1 minute. Add 1 cup water, 2 tsp sugar and 1/4 tsp salt. Stir to deglaze (remove browned bits from pan bottom). Simmer, uncovered, 2 minutes until apples are just tender. Spoon over pork.

3 ingredient meals: Shrimp Penne Florentine

Good morning everyone! I am so sorry I was absent yesterday! But to make up for it, I am sharing the most delicious three ingredient recipe I have EVER shared! And the best part? It couldn't be simpler!
Keep in mind, its not the most diet conscience, but you only live once...right?!

Shrimp Penne Florentine
Grocery List:
2 boxes frozen boil-in-bag creamed spinach
12 oz penne pasta
1 lb peeled, cleaned large shrimp


How to make it:
1. Bring a large pot of lightly salted water to a boil. Add spinach pouches; return to a boil. Add pasta; cook as pasta package directs.

2. Meanwhile, heat 1 Tbsp oil in a large skillet over medium-high heat. Add shrimp and 1⁄8 tsp pepper. Cook 3 minutes, or until cooked through. Remove from heat.

3. Scoop out 1⁄2 cup pasta cooking water; remove spinach. Drain pasta; return to pot. Add spinach, shrimp and 1⁄8 tsp pepper; toss to mix, gradually adding reserved water if needed to moisten.

Crock Pot Meals and 3 ingredient meals: Pork Pozole

Today's recipe is super easy, because you can just throw everything in the crockpot! And did I mention it only has three ingredients?
Pork Pozole
Grocery List:
2-lb boneless pork butt, fat trimmed, cut in bite-size chunks
1 jar recaito (see Note)
1 can hominy, rinsed

How to make it:
1. Put pork and recaito (or salsa) in a 3-qt or larger slow-cooker. Stir to mix and coat.

2. Cover and cook on low 7 to 9 hours, or until pork is very tender.
3. Stir in hominy, cover and cook 10 minutes to heat hominy. If desired, garnish with chopped cilantro and radishes.
*Great with warm flour tortillas.

**Note: Recaito is a thicker-than-salsa, cilantro-based seasoning that’s used to add flavor to rice, beans, soups and stews. But if you can't find it, regular salsa and chop in some extra cilantro!

3 ingredient meals: Chili Potpies

Hey Everyone! I hope everyone had a wonderful weekend! I know I sure did, and I have some REALLY fun news to share with you this week, so stay tuned! I am also going to be sharing a fun feature later today, so keep your eyes peeled for that too!

Today's meal though, is super simple. Three ingredients, 30 minutes, you just cant beat it!

Chili Pot Pies
Grocery List:
4 boxes frozen Boca meatless chili
1 bag frozen Latino vegetable blend (or other frozen vegetable mix with corn)
1 pouch Bisquick Complete Cheese-Garlic Biscuits Mix

How to make it:
1. Heat oven to 450°F. Have ready five 11⁄2-cup baking dishes or a 11⁄2-qt shallow baking dish.

2. Microwave 2 bowls chili at a time as pkg directs 5 minutes on high or until thawed. Transfer to a large microwaveable bowl, stir in frozen vegetables and microwave on high 5 minutes or until hot.

3. Divide among small baking dishes, or spoon into large baking dish. If using small dishes, place on a rimmed baking sheet.

4. Prepare biscuits as pouch directs; drop large spoonfuls on chili.

5. Bake 12 minutes or until chili bubbles and biscuits are golden brown and cooked through.

**Variations:
Sprinkle biscuits with shredded Cheddar cheese before baking.
For spicier chili, add some cayenne.
Stir chopped cilantro or parsley into the prepared biscuit mix.

3 ingredient meals: Chicken Roulades

So you want to impress your family with all your skills you have learned from gourmet momma?
Well then try this super easy recipe with only three ingredients!
Asparagus can be pricy, so wasit for them to go on sale, thats when they are at the peak of their season anyway!
Chicken Roulades
Grocery List:
1 1⁄4-lb pkg thin-sliced boneless chicken breasts 12 thin sandwich-sized slices Swiss cheese (from an 8-oz pkg)
1 lb asparagus, woody ends snapped off; spears simmered in salted water until tender, then cooled

How to make it:
1. Heat oven to 350°F. Line a rimmed baking sheet with foil.
2. Place 1 slice chicken on each of 4 sheets of plastic wrap. Cut extra chicken in pieces; place, overlapping, on slices so each is about equal size. Cover with plastic wrap; pound to fuse pieces to slices and until evenly thick. Uncover; sprinkle with 1⁄4 tsp salt and 1⁄2 tsp pepper.
3. Top each with 3 slices cheese to 1⁄2 in. of edge. Place 1⁄4 the asparagus at narrower end. Tightly roll up; secure with a wooden pick. Roll roulades in 11⁄2 Tbsp flour.
4. Heat 1 Tbsp oil in a large nonstick skillet. Add roulades; brown on all sides. Place on baking sheet. Bake 10 to 15 minutes until chicken is cooked through. Carefully remove picks and slice.

3 ingredient meals: Wild rice with Chicken and mandarin oranges


Ok people, watch out, because I have the BEST recipe ever on gourmet momma!
This recipe is a family staple around here, it has three ingredients, two steps, and a heck of a lot of flavor!

Wild rice with chicken and mandarine oranges
Grocery List:
1 box uncle bens wild rice, quick cook recipe
1 can mandarin oranges, drained
3 chicken breasts, cut to bite size

How to make it:
1. Cook rice according to package directions (with spice packet)

2. Cook chicken in large skillet, then add in rice and oranges.

How easy was that?!

3 ingredient meals: Chicken Parmesan

Ok, are you ready for this? Chicken Parmesan in less than an hour, with only 3 ingredients?!

Chicken Parmesan
Grocery List:
1 box frozen, breaded chicken patties
1 cup fire-roasted tomato & garlic pasta sauce
1 cup shredded mozzarella & Asiago cheese with roasted garlic


How to make it
1. Heat oven as chicken package directs. Line a rimmed baking sheet with foil.

2. Place patties on baking sheet; bake 5 minutes less than package directs.

3. Spoon 1⁄4 cup sauce over each patty; top with 1⁄4 cup cheese. Bake 5 minutes, or until cheese melts.

Different Takes:
Stir 1⁄4 cup sliced olives and 1 tsp capers into the pasta sauce.
Substitute thin slices of mozzarella for the shredded cheese blend.
Serve with pasta tossed with more of the pasta sauce, or with a green salad.

3 ingredient meals: Navel Spiced Cod

So I haven't featured a fish recipe on GM yet! I can't believe that because I love fish! I think that a lot of people shy away from fish beacuse they think its expensive or hard to prepare!
Well, not here ladies! This is cod, which is super cheap, and its EASY to make!
Navel Spiced Cod
Grocery List:
4 navel oranges
Four 3⁄4- to 1-in.-thick pieces cod fillet
1 cup thinly sliced red onion

How to make it:
1. Cut peel from 2 oranges to the flesh; section oranges and squeeze juice into a 2-cup measure. Squeeze juice from remaining oranges (you should have 1 cup).
2. Season fish with 1⁄4 tsp each salt and pepper. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
Add fish and cook 6 to 8 minutes, turning once, until lightly browned and cooked through. Remove to a platter; cover loosely with foil to keep warm.
3. Add onion to skillet, cook over low heat until lightly browned.
4. Add juice to pan, bring to a boil; cook until reduced to about 1⁄2 cup and slightly thickened. Stir in orange segments; pour over fish.

**Good with couscous and green beans.

3 ingredient meals: Swedish Meatballs

Hey Everyone!!
I am so glad to be back!! The flu has passed and I am starting to get back to normal! I thought, what a better way to come back, than to have an easy recipe!

So we will be making one of my FAVORITE three ingredient meals:

Swedish Meatballs
Grocery List:
1 pkg (24 oz) refrigerated appetizer-size fully cooked turkey meatballs
1 jar beef gravy
1/2 cup reduced-fat sour cream


1. Heat a large nonstick skillet over medium heat. Add meatballs and cook, turning often, 10 to 12 minutes until lightly browned and heated through.

2. Add gravy; cook, stirring, 1 minute or until simmering. Stir in sour cream until blended. Remove from heat.

3. Sprinkle with snipped fresh dill, if desired.

**Different Takes
Sauté 2 cups sliced mushrooms in a little oil before adding the meatballs.
Add 1/4 cup dry white wine to skillet just before adding the gravy.
Add a pinch of ground nutmeg and some sliced scallions to the gravy.

3 ingredient meals: Chicken Satay with Peanut Sauce

Happy Monday! I hope everyone had a wonderful weekend! I know we did, and I am sorry today's addition is a little late, I had to go grocery shopping this morning. (Yes, even the Gourmet Momma hates grocery shopping! lol)

But Today's recipe is so worth the wait! This meal makes my mouth water just talking about it!
I'm talking about Chicken Satay with Peanut Sauce! This meal only has three ingredients and it only take 16 MINUTES!


Chicken Satay
grocery list:
3 limes
2⁄3 cup bottled Thai peanut sauce
12 chicken tenders (or 4 breasts, sliced into tenders)

How to make it:
1. Heat outdoor grill or ridged grill pan over medium-high heat.

2. Squeeze 1 to 2 limes to get 2 Tbsp juice.
Mix with peanut sauce.
Pour all but 1⁄4 cup into a small bowl.

3. Thread 1 chicken tender on each of twelve 10- to 12-in. wooden skewers.
Brush both sides of chicken with the 1⁄4 cup sauce,
then lightly coat with nonstick spray.

4. Grill 2 to 3 minutes per side until chicken is cooked through.

**Serve with lime wedges and remaining sauce for dipping.
Garnish with sliced scallions, if desired.

3 ingredient meal: Buffalo Chicken Drumsticks

Who doesn't like hot wings right? But I know I'm not going to take my family to Hooters to get some good ones! And why should you, when you can get them right in your own kitchen! And with only THREE ingredients! Impossible you say? Not for the Gourmet Momma!
Plus, I have taken this tried and true appetizer and made it a full on meal! Keep this recipe on hand for super bowl Sunday! Your friends will LOVE YOU!


Buffalo Chicken Drumsticks
Grocery List:
2/3 cup hot Sauce (Franks, Tabasco, whatever is your fancy!)
8 chicken drumsticks (or enough for your family)
1 bottle (8 oz) low fat blue cheese dressing (I like the chunky kind!)
(a little oil for cooking)


How to do it:
1. Heat oven to 450°F.
Line a rimmed baking sheet with foil (for easy cleanup); set a wire cake rack on to the foil.

2. Put hot sauce in a small bowl. Gradually whisk in 1 Tbsp oil.
Brush over drumsticks (you’ll have some left);
season with salt and pepper if you like.

3. Bake on rack, turning drumsticks after 15 minutes and brushing with remaining sauce. Continue baking 10 to 15 minutes until cooked through.
Serve with blue cheese dressing for dipping.

**These drumsticks are also awesome with carrot and celery sticks!**
