Crock Pot Meals and 3 ingredient meals: Pork Pozole

Today's recipe is super easy, because you can just throw everything in the crockpot! And did I mention it only has three ingredients?
Pork Pozole
Grocery List:
2-lb boneless pork butt, fat trimmed, cut in bite-size chunks
1 jar recaito (see Note)
1 can hominy, rinsed

How to make it:
1. Put pork and recaito (or salsa) in a 3-qt or larger slow-cooker. Stir to mix and coat.

2. Cover and cook on low 7 to 9 hours, or until pork is very tender.
3. Stir in hominy, cover and cook 10 minutes to heat hominy. If desired, garnish with chopped cilantro and radishes.
*Great with warm flour tortillas.

**Note: Recaito is a thicker-than-salsa, cilantro-based seasoning that’s used to add flavor to rice, beans, soups and stews. But if you can't find it, regular salsa and chop in some extra cilantro!
