15 minute meals: Tuscan Tomato Soup

Hey Everyone! So this weekend I was thinking a lot about how much I love comfort food. But usually here in the south, that requires food that is cooked all day, low and slow. But sometimes I just want some comfort in a hurry!
One of my favorite things is the Tomato soup from LaMadeline. Well, I have a recipe that is not only healthy and super tasty, but it only takes 15 minutes! Now thats comfort on command!

Tuscan Tomato Soup
Grocery List:
1 jar (24 to 26 oz) marinara sauce
1 can (19 oz) cannellini beans, rinsed
1 jar (7 oz) roasted red peppers
2 Tbsp extra-virgin olive oil
1 clove garlic
1 3⁄4 cups chicken broth
1⁄4 cup thin strips fresh basil leaves
Freshly ground pepper, to taste

How to make it:
1. Put sauce, beans, peppers, oil and garlic in a blender or food processor; process until smooth. Pour into a medium saucepan along with the broth. Stirring often, bring to a simmer over medium-high heat.

2. Remove from heat; stir in basil. Spoon into bowls; grind pepper on top.Good served with Parmesan Toasts (recipe follows).

**PARMESAN TOASTS Heat broiler. Line a baking sheet with foil. Place 12 thin slices French bread on foil; sprinkle each slice with 1 tsp grated Parmesan cheese. Broil 2 to 3 minutes until lightly toasted.

15 min. Meals: Chicken Pineapple Fajita's

YUMMM! Thats all I can say about this recipe! :)

Chicken Pineapple Fajita's
Grocery List:
8 6-inch flour tortillas
4 1-inch slices peeled fresh pineapple
1 lb. skinless, boneless chicken breast halves
2 small red or orange sweet peppers, seeded, cut in strips
2 tsp. Jamaican jerk seasoning
1/8 tsp. ground black pepper
1 Tbsp. cooking oil
Fresh cilantro and lime wedges

How to make it:
1. Preheat oven to 350 degrees F. Wrap tortillas in foil and heat in oven. Meanwhile, coat a 12-inch nonstick skillet with cooking spray; heat over medium-high. Add pineapple slices; cook 4 to 6 minutes, until browned, turning once. Remove.

2. Cut chicken in strips; toss with sweet peppers; jerk seasoning, and pepper. Heat oil in skillet; add chicken and peppers. Cook and stir over medium-high 4 to 6 minutes, until chicken is no longer pink. Core and chop pineapple. Serve with chicken, tortillas, cilantro, and lime.

15 minute meals: Greek Pita Taco's

Welcome back! Wow, I really needed that weekend! I must tell you though, I had the best birthday EVER! And you are all so sweet for sending in your birthday wishes! So what did I get you ask? Well kitchen gadget's of course! lol And I will use them to make this super EASY and HEALTHY meal in just 15 minutes!

Greek Pita Taco's
Grocery List:
1 lb lean ground chicken
1 1/2 tsp each oregano, paprika and finely minced garlic
1/2 tsp salt
4 pitas, split, warmed in microwave
2 cups shredded romaine lettuce
1 cup each diced tomatoes and cucumbers
3/4 cup plain low fat yogurt
1/2 cup crumbled feta cheese


How to make it:
1. Coat large nonstick skillet with cooking spray. Heat over medium-high heat. Add ground chicken, oregano, paprika, garlic and salt.

2. Cook, breaking up chunks with a wooden spoon, until cooked through, about 4 minutes.

3. Top each split pita half with 1/4 cup of the lettuce. Add 1/4 cup of the chicken mixture, 2 Tbsp each of the tomato and cucumber, 1 1/2 Tbsp of the yogurt and 1 Tbsp of the feta. Fold in half to eat.

15 minute meals: Mustard Chicken

Good Morning everyone! I hope you all had a wonderful Holiday weekend! I am just going to jump into today's recipe, because I am so excited about it! a Chicken dinner in 15 minutes, under 300 calories, and SUPER tasty! Talk about flavor! You know when your looking to add flavor to your meals, don't look for fat! Look for lemon juice or zest, mustard of any kind, herbs, pepper, spices...all of these things add TONS of flavor with no fat and very little calories!

Mustard Chicken
Grocery List:
1/2 cup all-purpose flour
4 boneless, skinless chicken breasts
3 tsp olive oil
1 pint grape tomatoes
1/2 tsp minced garlic
3/4 cup chicken broth
3 Tbsp each grainy Dijon mustard
3 Tbsp reduced-fat sour cream
1 Tbsp snipped chives
1 bunch watercress (or another spicy green!)


How to make it:
1. Put flour in large plastic bag, add chicken and shake to coat.

2. Heat a tsp oil in large nonstick skillet over medium-high heat. Sauté grape tomatoes about 3 minutes or until some begin to soften. Add garlic; cook 30 seconds. Remove to plate.

3. Heat 2 tsp oil in same skillet. Cook chicken about 5 minutes each side, or until instant-read thermometer inserted from side to middle registers 160ºF. Remove to plate; cover.

4. Add broth to skillet, stirring to dissolve browned bits. Whisk in mustard and sour cream. Simmer until slightly thickened; add chives.

5. Place chicken on watercress; spoon mustard sauce on top. Serve with tomatoes.

15 minute meals: Ravioli with Sausage

HAPPY SPRING!! Yay! I am so excited that Spring is here! All the produce is super fresh, mellons are coming into season, tons of fruit is crisp and juicy. I just love spring! And since the wather is so beautiful, who wants to be cooped in a kitchen all day, right? So I came up with a recipe that is SOOO delicious, AND SOOO quick! Just 15 minutes from start to finish! You just cant beat that.

Ravioli with Sausage
Grocery List:
2 bell peppers
1 small onion
1 pkg cooked Italian chicken sausage (turkey is great too!)
2 pkg refrigerated cheese ravioli (or one large frozen bag)
2 tsp oil
1 tsp minced garlic
1/2 cup chicken broth
10 fresh basil leaves, thinly sliced


How to make it:
1. Bring 4 cups water to a boil in a 12-in. deep-sided skillet. Meanwhile, halve peppers and onion crosswise, then cut into thin wedges. Cut sausages into 1/2-in.-thick slices.

2. Add ravioli to boiling water; cook as package directs. Meanwhile, heat oil in large nonstick skillet over medium-high heat. Sauté peppers and onions 4 minutes. Add sausage; cook 2 minutes. Add garlic; cook 30 seconds.

3. Stir chicken broth into sausage mixture; remove skillet from heat. Drain ravioli; add to sausage and peppers. Sprinkle with basil.
