3 ingredient meals: Tilapia Veracruz
Yum! I love fish, and Tilapia is on the top of my list. It's firm and tasty and readily available at your local grocery store almost all year. And best of all, it's very inexpensive for fish! This recipe is super easy and will have dinner on your table in less than 20 minutes!
Tilapia Veracruz
Grocery List:
4 tilapia fillets (5 to 6 oz each)
1 cup mango and peach salsa
1 ripe avocado, diced
How to make it:
1. Brush stovetop grill pan or broiler pan with oil and heat.
2. Brush tilapia with 1 tsp oil (preferably olive oil). Sprinkle with 1/4 tsp each salt and pepper.
3. Place on hot pan. Grill or broil 5 minutes or until cooked through, turning once.
4. Mix salsa and avocado. Top each fillet with about 1/2 cup. Sprinkle with chopped cilantro if desired.
Different Takes:
• Sprinkle fish with a little ground cumin or chili powder before cooking.
• Make recipe with mahi-mahi or sea bass instead of tilapia.
• Try using a chipotle-flavored salsa; add a squeeze of fresh orange juice.
