Light and Healthy: Mojo Chicken

Good Morning! Today's recipe will surly warm you up during this cold month! Typically people only grill during the summer, but I think its a great way to bring not only a little warmth, but GREAT flavor!
Grilling chars the natural sugars in food, releasing rich, bold flavors!

Mojo Chicken:
Grocery List:
Five 3⁄4-in.-thick slices fresh pineapple

1⁄2 cup Mojo Criollo Marinade
1 Tbsp oil
4 boneless, skinless chicken breast halves

How to make it:
1. Chop 1 slice pineapple; process in blender with marinade until smooth.
Remove and reserve 2 Tbsp.
Pour remaining mixture into a large ziptop bag; add chicken, turn to coat and refrigerate at least 2 hours.

2. Heat outdoor grill or stovetop ridged grill pan. Brush grill and pine­apple slices with oil. Remove chicken from bag; discard bag with marinade.

3. Grill chicken 5 minutes. Turn chicken; add pineapple to grill.
Grill both, turning pineapple once, 3 minutes, or until chicken is cooked through and pineapple is lightly charred.
Slice chicken; drizzle with the reserved 2 Tbsp marinade.
Garnish with chopped cilantro, if desired.
**Good served with black beans and plantain chips.
