3 ingredient desserts: Eggs on Toast
Ok, so I know eggs on toast doesn't sound like a yummy dessert! But this is just a creative spin on a good dessert that even your kids will love!
Eggs on Toast
Grocery List:
4 slices frozen cinnamon French toast
1 pt vanilla frozen yogurt or lowfat vanilla ice cream
1 can apricot halves in very light syrup, reserve syrup
How to make it:
1. Toast French toast as package directs. When cool, put on serving plates.
2. Using an ice cream spade (not a scoop), top each slice toast with frozen yogurt. Make 2 shallow depressions in yogurt with back of a spoon. Place apricot halves in depressions.
3. Spoon apricot syrup over "eggs." Sprinkle with cinnamon sugar, if desired.

Good recipe! I am enjoying poached eggs lately, but can't seem to get the egg to stay together, is there a secret to that? Some days it comes out perfect, some days the egg yolk separates.
