Salmon Burgers with Wasabi Mayo
Grocery List:
BURGERS
4 scallions, cut in 1-in. pieces
1 Tbsp pickled ginger slices (found in your market's Asian section)
1 tsp dark sesame oil
1/4 tsp each salt and freshly ground pepper
White from 1 large egg
1 Tbsp soy sauce
2-lb piece salmon fillet, skin and pin bones removed, cut in 1-in. cubes
Nonstick spray
6 leaves Boston lettuce
Toppings: wasabi mayonnaise (you can find this on the mayo isle), pickled ginger slices and radish sprouts
Garnish: black sesame seeds
How to make it:
2. Burgers: In food processor, pulse scallions, ginger, sesame oil, salt and pepper until finely minced, scraping down sides of processor bowl once or twice. Add egg white and soy sauce; pulse to blend. Add salmon. Pulse just until very finely chopped but not a paste. Shape into 6 burgers, each about 3/4 in. thick.
3. Coat burgers with nonstick spray. Grill, turning once, until done as desired (6 minutes for medium-rare, which is preferred).
4. Place on lettuce leaves. Top each with wasabi mayonnaise, ginger slices and sprouts; sprinkle with a pinch or two of sesame seeds.

Well......in a few weeks I will as we will be adopting a 6 year old who is going to go into first grade this year, so I can't relate yet, but it looks like our daughters are the same age. :-) We are also bringing home her little sister who is 4 years old. :-)
Any ideas for kids meals, have you done a section on kids meals yet? I will find out on our first visit next Monday what they like.

These look great! Can you use canned salmon, as well? If so, how much?
Molly! how wonderful for you! I dont have a "kids section" per say, but Lagan eats many of the meals from my site! :) That is so amazing though!!! Congrats!!!

you can certainly use canned (or pouch) salmon. I would say for 1 burger to use about 1.2 a can or one small pouch! Let me know how it turns out if you decide to use the canned salmon, I would love to know!!
