Light and Healthy: Gourmet Momma's Meatloaf

Hey Everyone! I'm back from the dead! I'm actually still really sick, but I couldn't let my readers down! I got an email from my lovely friend Molly yesterday asking for a Meatloaf recipe that I lean on!

Well Molly, meatloaf happens to be one of my favorite dinners, but its usually really bad for you! So I doctored up one a few years ago that my whole family loves, and its not bad for you! But you would never know it when your eating it!

Gourmet Momma's Meatloaf
Grocery List:
2lbs. ground turkey
1C rolled oats
1 egg
1 medium onion, chopped
1 medium carrot, chopped
1 rib celery, chopped
1 Tbsp. Worcestershire sauce
1 can tomato soup
4 tbsp. ketchup

How to make it:
1.) Saute the carrot, onion, and celery in olive oil cooking spray until the onion turns clear.

2.) Mix the sauteed vegetables with meat, egg, Worcestershire, rolled oats, and half of the tomato soup. Pack into a loaf pan (sprayed with cooking spray).

3.) Place meatloaf into a 350 degree oven for 2 hours.

4.) When meatloaf is done, in a small sauce pan, mix the other half of the tomato soup, ketchup, and about 1/2C water and bring sauce to a boil.

5.) Slice meatloaf into 6 slices and top them with the tomato sauce.

Sorry you're still feeling bad, Nikki, but thanks for the recipe for Meatloaf! I happen to have all those ingredients so I see this being tomorrow night's dinner.
