Comfort Foods: Fried Chicken

Fried chicken is the ultimate comfort food!
But I think a lot of people have trouble trying to make it, and make it healthy.
Well, today's recipe is a little different than most gourmet momma recipes, because its not really a recipe at all, more of some guidance tips to create the chicken you desire.
I am going to give you three different techniques to make this dish, and you can decide which one suits your taste best! :)
Method 1:
Cracker crumbs or Shake and Bake for chicken
Chicken pieces
Egg wash (3-4 eggs and 2-3 Tbsp water mixed)
--Dip your chicken in the egg wash, then shake in the cracker crumbs or shake and bake, then place on cookie sheet and spray with Olive Oil Spray.
--Cook 35-45 min. on 350 or until done on the inside.
Method 2:
Chicken pieces
cooking oil (canola)
--seasoning of choice (I like cajun seasoning)
--coat chicken liberally with seasoning and bake in a 350 degree oven for 35-40min. or until no blood comes through.
--heat oil until ready to fry (350-375 degrees)
--drop chicken into frying oil for 3-4min. until brown.
Method 3:
chicken breasts (boneless/skinless)
bread crumbs
egg wash
flour
--Coat chicken in flour, then egg wash, then bread crumbs
--place on cookie sheet and spray with oilive oil cooking spray
--cook on 350 15-20min., turn to other side and spray with oil, and cook another 10-15min.
(GREAT for chicken Parmesan!)

These are yummy baked~~~I added a pack of dry ranch mix to the cracker crumbs and it really gave it that...UMPH! I'm adding this recipe to my menu next week:)
