Light and Healthy: Panzanella Salad


Happy Valentines Day!!
I thought today, I would share things that I LOVE, because after all, isn't that what v-day is all about?
I mentioned yesterday, that I loved Panzanella salad. Now, I know some of you have no idea what that is, but its really very simple. Panzanella is just Italian Bread Salad.
This salad is bright and refreshing, and I can just eat bowls full of it!
Italian Bread Salad
Grocery List:
1 french baguette, cut bite-size
4 ripe tomatoes, cut bite-size
(you can also use grape tomatoes)
1 cucumber, cut bite-size
1⁄3 cup lowfat Italian dressing
1⁄3 cup diced red onion

How to make it:
1. Heat oven to 350°F. Spread bread on a rimmed baking sheet, drizzle lightly with olive oil, and sprikle with salt and pepper. Bake 15 to 20 minutes until dry and crisp.
2. While bread toasts, gently toss tomatoes, cucumber, dressing and onion in a large bowl to mix.
3. Add bread cubes; toss to mix.
